Rating7.7Villa Rolandi's culinary identity is built on two serious restaurants: Casa Rolandi, a Swiss-Italian institution with a firewood brick oven and celebrity following since the 1980s, and Le Metissage, a Paul Bocuse-trained chef's French-Mexican fusion tasting menu that changes nightly. Both are included in the Endless Privileges rate. Le Metissage closes Tuesdays and requires a reservation. The Casa Rolandi Bar and Lobby Bar handle drinks throughout the day.

Swiss-Northern Italian
The restaurant that preceded the resort by decades — a Swiss-Northern Italian institution with a firewood brick oven, a blue pyramid-roofed pavilion on the Caribbean, and a list of returning guests that includes enough celebrities to have generated its own mythology. The kitchen produces tuna carpaccio, fresh handmade pasta, ceviches, and gourmet wood-fired pizzas with prosciutto and mascarpone from breakfast through dinner. No reservation required. The oceanfront pavilion seat at sunset, with the Cancun skyline on the horizon, remains the resort's signature experience.

French-Mexican Fusion
A fine-dining room helmed by Chef Daniele Muller, trained under legendary French chef Paul Bocuse, serving a nightly seven-course surprise tasting menu that changes daily. The menu blends French technique with Mexican ingredients — flavors that sound contradictory on paper and work well on the plate. An open kitchen lets guests watch the team work; wine crates line the walls of the atmospheric dining room, and an extensive cellar backs up the sommelier-selected pairings. Dress code requires sleeves and long pants or dresses. Closed Tuesdays. Book on arrival for your preferred evening — it fills.

Cocktails & Spirits
Within the Casa Rolandi restaurant, serving premium cocktails, top-shelf spirits, and an extensive wine list from 11 AM to 11 PM. The oceanfront position makes it the natural choice for pre-dinner drinks. All spirits included in the Endless Privileges rate.
Cocktails & Light Fare
An open-air lounge in the resort's lobby with warm wood furniture, teal accents, and stained-glass archways overlooking tropical gardens. Cocktails, wines, and premium spirits from 10 AM to 11 PM. The lantern-lit ambiance makes it a favored post-dinner gathering spot before the Casa Rolandi Bar closes.
