Unico Montego Bay Will Put Jamaican Art and Farm-to-Table Food at the Center
AIC's Unico brand used JAPEX week to detail how its March 2027 Montego Bay debut will feature local artists, producers, and a culinary ambassador.
UNICO Hotel Collection is using Jamaica's JAPEX trade week to spell out how its first island resort will feel when it opens in March 2027. UNICO 18°77° Montego Bay will bring 451 beachfront, adults-only rooms to Montego Bay, and AIC Hotel Group says the stay should taste, sound, and look like Jamaica rather than a generic luxury all-inclusive.
Speaking at a Partner Media Update, AIC vice president of global marketing Oscar Serrano said the brand avoids copying the same formula from Mexico to the Caribbean. The Montego Bay resort becomes the third Unico property after UNICO 20°87° Hotel Riviera Maya and UNICO 20°105° Riviera Nayarit, with four towers and rooms that all face the beach.
What guests should expect on property
Earlier brand materials describe nearly all rooms with ocean views and private outdoor spa tubs, nine restaurants and bars, four pools, and the largest Esencia Wellness Spa in the Unico portfolio. Signature Local Host service remains the booking differentiator: a dedicated contact who handles reservations, spa times, golf, and excursions so guests spend less time on logistics.
- 451 adults-only rooms across four beachfront towers
- Nine restaurants and bars mixing global dishes with Jamaican ingredients
- Esencia Wellness with hydrotherapy, hammam, movement, and beauty services
- Live music, spirits tastings, workshops, and chef-led culinary sessions
Why the culture pitch matters for Jamaica shoppers
Serrano framed the project as a circular economy play, not only décor. AIC plans to bring local artists into the build and display their work for international guests, source farm-to-table ingredients from Jamaican producers, and associate a Jamaican culinary ambassador with the resort. Music and people-focused hospitality are part of the same brief: leave with a destination memory, not just a nice room photo.
That pitch lands in a Montego Bay market that already has deep adults-only inventory. Unico is betting travelers will pay for a stay that feels rooted in Jamaica's food, art, and music rather than another interchangeable beach club. Travel advisers may see familiarization trips as early as December 2026, with a stronger push in January ahead of the March opening.
Reservations for stays from March 1, 2027 are already open through Unico. If you are comparing Jamaica adults-only options for next spring, put Unico on the shortlist for couples and small groups who want ocean-facing rooms with outdoor spa tubs, then confirm opening rates and Local Host inclusions before locking peak dates. The Riviera Maya sister resort is the closest living reference for service style until Montego Bay checks in its first guests.
