Los Establos sits on the grounds of the Kotowa Coffee Estate in Boquete, 4,000 feet up in the highlands of Chiriquí Province, Panama. The original hacienda structures — horse stables, estate buildings — were converted into guest accommodations around 2000, and a 2020 renovation brought the rooms up to their current condition. With 17 rooms total, it has more in common with a high-end boutique hotel than a conventional all-inclusive resort.
The clearest reason to choose Los Establos over other Panama options is the tour inclusion. Every night of your stay (excluding arrival and departure days) comes with one guided activity from a menu of 13 or more options: coffee plantation tours on the adjacent Kotowa estate, bird-watching expeditions in some of Central America's richest birding territory, hikes to the Lost Waterfalls, visits to the Caldera Hot Springs, suspension bridge walks through the cloud forest, and scenic panoramic drives. These are actual guided excursions, not watered-down resort activities — the local naturalist guides who run the bird-watching tours are a genuine draw for serious birders.
The honest limitation: Los Establos sits in the mountains. There is no beach, no ocean, no pool with a swim-up bar. The single pool — the Oasis — has mountain views but is modest in size. The treetop specialty dinner comes with a surcharge and must be reserved; it's worth booking but shouldn't be assumed as part of the standard experience. Guests arriving expecting a conventional tropical all-inclusive will be disappointed. This property makes sense for couples and friends who want a culturally engaged, nature-focused stay with high comfort standards.
Practically: fly to Panama City Tocumen (PTY) and connect domestically to David Enrique Malek Airport (DAV) — a 45-minute drive from the resort. Downtown Boquete, with ATMs and shopping, is about five minutes away by car. The resort is adults-focused; some sources indicate ages 8 and above are technically permitted, but the marketing and atmosphere lean decidedly adult. The Signature Coffee Scrub at Tranquility Spa uses beans from the estate's own plantation.
