Grand Cayman has a striking new addition to its hotel scene. ONE|GT, a 95-suite luxury resort rising 144 feet above George Town, has opened its doors as the island's tallest building and one of its most ambitious hospitality projects in years.
The property, which began accepting reservations on May 8, is part of the Small Luxury Hotels of the World collection. It pairs minimalist suite design with floor-to-ceiling windows framing views of George Town's harbor and the Caribbean Sea beyond.
Rooftop Living and Michelin-Pedigree Dining
The resort's signature feature is its rooftop lifestyle deck — described as the only one of its kind on the island. Guests get access to an infinity pool, a Technogym fitness center, and private butler services. It is a different kind of Caribbean hotel experience, more urban boutique than beachfront sprawl.
The culinary program is led by executive head chef Rene Cahane, whose three-decade career spans Michelin-level kitchens across the U.K., France, and the Caribbean. The resort features three distinct restaurant concepts, positioning it as a serious dining destination in its own right.
A New Kind of Caribbean Luxury
ONE|GT represents a growing trend in Caribbean hospitality: high-design, city-adjacent hotels that cater to travelers who want culture, dining, and nightlife alongside sun and sand. With 82 luxury residences alongside the hotel suites, the project also taps into the region's booming branded-residence market.
Suites start above 50 per night during opening month, with lower rates available during the June-to-October off season. For travelers who have done the sprawling beach resort circuit, ONE|GT offers something deliberately different — and Grand Cayman just got a lot more interesting for it.
