One GT opens May 1 in the heart of George Town, bringing a rooftop infinity pool, three restaurants, and a members-only club to a Caribbean capital that's never had a hotel in its downtown core.

George Town, the capital of Grand Cayman, has never had a hotel in its downtown center. That changes May 1, when One GT opens as the first property to plant a flag directly in the capital's urban core — a 10-minute drive from Owen Roberts International Airport and steps from the harbor, restaurants, and shops that define the city.

The boutique property has already affiliated with Small Luxury Hotels of the World, which gives it instant credibility in the luxury space. Its standout feature is Grand Cayman's only rooftop infinity-edge pool, offering panoramic Caribbean views. A second pool, the Oasis Pool, sits on the third floor surrounded by greenery.

Dining and the Members Club

One GT is leaning hard into food and beverage with three distinct concepts: Perle, a French gastronomy restaurant with Mediterranean influences; Byū, a rooftop island-Asian fusion spot with city views; and Café Bellini, an Italian-style coffee bar and pastry shop. In-room dining is also available.

Perhaps the most intriguing element is ONE | Above, a private members club offering priority reservations and invitation-only events. It's a model more common in London or New York than in the Caribbean, and it signals One GT's ambition to position George Town as more than just a cruise port stopover.

Opening rates start at $380 per night for the Dawn Suite, which features a king bed and city-view patio. The rooms are designed in a larger, residential style — a deliberate contrast to the beachfront mega-resorts that dominate the rest of the island.

Grand Cayman's tourism economy has long been driven by Seven Mile Beach properties and dive resorts, making One GT's downtown bet a genuinely novel play. Whether it reshapes how visitors experience George Town is worth watching.
